No, you cannot fully customize the graph's appearance, such as manually configuring axes or labels. Each graph is rendered automatically based on the data values sent to Harvest Data.
However, you can control how the data is visualized using the options described in the Viewing Data documentation:

latandlonentries, you can view the data on a Map chart. - Multiple Devices: You can select and view data from multiple devices on a single graph.
